It's become my top cookbook. However, these are not the kind of recipes where you look in the refrigerator, gather whatever you've got and you prepare a last minutes Ottolenghi dish. They take time, have a few 'moving pieces', require an artistic moment, and a couple of days of foraging for the ingredients (including going to Amazon to order some of the more exotic ingredients.) But the results are spectacular. It is for special dinners, even if it is just for yourself. The blend of flavors (do keep the proportions noted in the recipe), the result of mixing spices and ingredients that upon reading one's eyebrows go up, is truly magical. And it has recipes with meat and fish. Yes!
The recipes in this cookbook are often tasty and interesting. It is a feast for the eyes as well as the palate. Most of the ingredients are readily available. My only concern with this cookbook is that the directions are written in paragraph form rather than in numbered steps. When cooking something for the first time it often seems more confusing than it should be. I have to keep referring back to the directions and have to search for the next step. I am an experienced cook and do not find this an issue with many other cookbooks I use. Overall, this irritation is manageable since the outcome is usually worth the effort.
I was familiar with Mr. Ottolenghi's food through his Plenty cookbook. I chose this one after finding recipes contained in the Jerusalem cookbook online: the Baby Spinach Salad with Dates and Almonds, among others. Many recipes use dried fruits and nuts with meats, vegetables (both cooked and raw) and salads, creating a unique flavor, as well as using familiar ingredients like feta cheese, tahini, fresh herbs, and pita bread . As others have noted, there is a lot of prep work involved in creating some of these great dishes but the end results are worth it. I have multiple eating plans and dietary restrictions among my family members: keto, paleo, gluten free, etc. and all want to eat satisfying, healthy food. I can usually alter the recipes without significantly changing taste. For those whose diets require concise nutritional breakdowns, you will need to do your own analysis as this information is not included.
This cookbook is approachable and the recipes are actually something you will make...and then make again. If you love Middle Eastern cuisine, buy this. I have made the basic Hummus...it takes some time, so be aware that you need 24 hours. It was so good. I agree with the authors that if anything is going to bring the middle east to peace..it's gotta be the hummus. The other thing I made was the Couscous with tomato and onion. Love the flavors, I will make both of these again. The great thing about the recipes are, they aren't so wild that you can't imagine making them. The ingredients are, for the most part, easy to find. The techniques are simple enough for the home cook. Falafel is next on the list.****Edit****I would just like to say, that one of the reasons, I think, that this is so doable for a Middle Eastern cookbook, is these are the recipes that regular people make. This is what the moms and grandmas make. That's the kind of food I want to make as well, good home cooking.
This is an interesting and beautiful cookbook for those who don't mind some work in the kitchen and some recipes that take time and several steps. If you want ultra-easy cooking, this is not the cookbook for you. We had most of the spices we needed and were able to find the more unusual spices online and in Middle Eastern markets. This is not a cookbook we will use everyday but it makes for a good addition to our cookbook collection and treats us to authentic Middle Eastern dishes.
Everything I make out of this book is not only delicious, but memorable. Have lots and lots (and lots) of cookboks and this is a fav. Great gift too, with lovely pics throughout. Many good vegetarian choices included that are more than just glorified side dishes. The flavor combinations are giving me new ideas. Love the use and large amounts of dry and fresh spices and herbs. Really enjoying this cookbook and can tell it is one of the few that I will reach for again and again for years to come.
Every recipe we have tried has been a hit. Usually we don't like to fuss in the kitchen at our house. And some of these recipes do require some time to make. But we have been amply rewarded every single time. These are awesome recipes that we are happy to make over and over again.
I will be honest and say that I bought this more for the history and cultural aspect than actually planning to cook these recipes. Food sensitives bar many of the ingredients. I loved reading the stories about the various recipes, and was intrigued by the exotic ingredients of some. I did try cooking the lamb meatball recipe omitting the various allergens and substituting what I could (dairy with almond milk). It still came out great and I look forward to trying out more.
