Josephine Caminos Oría was born in La Plata, Buenos Aires and moved to America with her family where she began cooking alongside her grandmother. Grandma Dorita instilled a love of all things Argentine in her ,especially dulce de leche. Together with her husband, Gastón, she is the founder of La Dorita, a small-batch, all-natural line of dulce de leche products. This is a beautiful book. I reviewed it via the library and then purchased my own copy. The personal stories are wonderful and very interesting to read. I tend to read cookbooks for the history/stories as much as for the recipe content. I have made 2 batches of the basic de Leche - the taste and color are wonderful. I made them in 1/2 batches, using 1/2 gal. of milk and the appropriate measurements of the other ingredients each time, because I do not own a 12 qt. pot, only an 8 qt. and that was sufficient to accommodate the volume. There are a couple of issues that I became aware of during my cooking. 1. The book does not lay flat and must have some weighted object to keep it open. 2. If you live at altitude, make your cooking temperature adjustments for the boiling point. 3. Watch carefully your cooking time, it may not take the entire 1 hr. 45 min. to reach the desired doneness. My first batch reached the confectionairy stage before the total cooking time was reached - to solve this issue and make it the spreadable consistency I was seeking, I thinned it with some heavy cream. I gave some as a gift and have had rave reviews. I am excited to try some of the other recipes - especially the cheesecake.
I'm giving this 4 stars instead of three, just because the spirit in which the book was written is so sincere and loving. The author clearly loved and cherished her grandmother, as well as her Argentinian roots, and that clearly shows through the darling stories and comments. Although I haven't made any of the recipes -- and I'll update this with specific information once that happens, I wasn't able to give it a full 5 stars because of the lack of pictures. Hold on! I know some are saying, "Pictures needed in a cookbook, rubbish!" I'm firmly in the group that does NOT need photos in cookbooks. However, given that this is written for an American readership, it would have been nice to see at least some of the recipes that are unfamiliar outside of the Argentina or the Latin-American world. I know that photos add expense, and I get that this is a family business that does a lot for the community. Drawings, real drawings that replicate the dish, would have been a great substitute. Or, a middle sections with even a few photos - - maybe even a collage of photos.... I DO recommend this book if you're looking for a cookbook that's different from most of what's out there.
I love Dulce de Leche... so when I saw this book I had to check out the recipes. I was in for a surprise, because I learned a whole family story behind what makes this sweet treat so special to the life of the Argentine author. Her anecdotes were heartwarming... but the recipes take the cake. I imagined the book would be mostly dessert items, but it includes dishes for breakfast, afternoon tea, snacks, dinner and desserts. I like to see photos of recipes and was happy to find them on the author's Instagram: JosephineCaminosOria. In fact, I also learned that she sells an all natural Dulce de Leche online at her ladorita website. I have made the sweet potato ravioli, which were heavenly (although when I stacked them one on top of the other in my serving dish, they stuck together a bit upon cooling) and the carrot soufflé. My family loved the soufflé as a side dish. It was wonderful and I will definitely be making that again for a holiday meal. On the sweeter side, I have baked the divine carrot layer cake and dulce de leche flan. I would highly recommend both. Looking forward to trying out some other recipes in the future. Hopefully, the salmon next...
This book is a special book about the "taste" of Argentina. Having travelled much of Patagonia in Argentina and Chile over 25 years, I love the flavor of Dulce de Leche in all the many ways you can enjoy it. This is not a Carmel sauce that most Americans have tasted but a vastly richer and wonderful contribution to the foods of South America---especially Argentina.The real treasure of this book is all the ways you can enjoy Dulce de Leche on a wide variety of foods from veggies to deserts!The author did a masterful job of presenting this book. I love fine flavors and this book will be a great edition of exceptional recipes to enjoy!
Wow, this book opened a new world of flavors for me. After hearing the author on NPR, my curiosity was peaked. I'd heard of Dulce de Leche, a local bakery makes some amazing DdL cookies, but I had no experience with homemade. After creating my first batch, I'm totally hooked! Just putting it in my coffee each morning is fantastic, and of course that's just the beginning, because Josephine gives you a whole cookbook full of uses from breakfast thru dinner and beyond. Is it worth it standing at the stove and stirring a pot for 2 hours? Yes, it is worth it!
WOW...I've made so many yummy recipes over the past six months since buying this book. Usually my cook books seem to get used once or twice then find themselves on a shelf living a lonely life never seeing the light of day. Not this book! Not only is the actual construction and cover of the book beautiful (its fully displayed next to the stove top in my kitchen), the super simple laid out sweet and savory dulce de leche dishes have my family always coming back to this great book for more delicious ideas. We have tried a number of recipes, and they are all so fun and easy to make and absolutely delicious to eat.Do yourself a favor and add this cookbook to your kitchen, it won't disappoint! If you're like me you'll fall in love with it and give it away to all of your friends and family. I highly recommend this book!!!
I’m an Argentine who has been living in the States for more more than 15 years now, and this book is a taste of home for me and brought back so many childhood tastes and memories. It also includes recipes that incorporate new ways to use dulce de leche that are more tailored to the ways Americans eat here that I’ve enjoyed trying. Finally, a book that introduces the real Dulce de Leche we all love in Argentina. I highly recommend this book. I love it, and my kids even more!!! I got few books to give as a present to my close friends.
